Preparing or distributing edible food stuffs; smithing the food; making food from scratch; utilizing tools of the culinary trade to clean, prepare, cook, present and serve the finest food to the finest people.

Meet Robert Ulrich, Owner & Chef at FoodSmith

Viennese Chef Robert Ulrich has been delighting the Twin Cities with his Austrian creations fused with modern American cuisine since he moved here from Europe in 1995.

He started his career at the young age of 14, entering culinary school in Vienna, Austria. He went on to hone his craft at the Hotel Intercontinental (London and Frankfurt); at a historical tourist spot in Zurich, Switzerland; and doing two tours on the Holland American Five Star Cruise Line.

He moved to Minneapolis to assume a sous chef position with the Marquette Hotel, and was quickly promoted to Executive Chef. After he and his wife married, they moved to Washington, D.C., where he spent a few years as Executive Chef at the boutique Morrison House Hotel in Old Town Alexandria and then as Corporate Chef for Seasons Culinary Catering Services.

Since moving back to the Twin Cities, Chef Robert and Ann have owned and operated Mendoberri Café and Wine Bar in Mendota Heights, and now own and operate FoodSmith Bistro Pub in West St. Paul.

Here is where you’ll find all of his made-from-scratch American adaptations, plus his classic Viennese Chicken Schnitzel, Tavern Späetzle, and of course, the house-made Apfelstrudel with a generous helping of Schlag!
